STRAWBERRY
SQUARES
1/2 c. sifted flour
1/4 c. brown sugar
1/2 c. chopped pecans
1 stick margarine, melted
2 tsp. lemon juice
1 c. sugar
2 c. sliced fresh strawberries
2 egg whites
1 pt. whipping cream, whipped
Stir first 4 ingredients together. Spread evenly in 3-quart baking dish and
bake at 350 degrees for 15 to 20 minutes. Let cool. Combine lemon juice,
sugar, berries and egg whites in large mixing bowl. Beat at high speed until
stiff peaks form (at least 10 minutes). Then fold in whipped cream. Spread
over first layer in dish. Freeze at least 6 hours. Cut in squares and top
with whipped cream to serve.
